Workshop 3 - Herb biscuits

Equipment
- 2 bowls
- An oven
- Cookie cutters
- A baking sheet
- Butter
- Olive oil
- Herbs
- Water
- 1 egg
- Salt
- Flour
Preparation
1. In a bowl, mix the butter and olive oil into a paste. Chop the herbs finely.
2. In the second bowl, mix the chopped herbs with water and the egg. The mixture should be very green.
3. Put the flour and half a teaspoon of salt in the mixing bowl. Add the butter/oil paste and the beaten egg to the herbs. Mix well to obtain a supple, smooth dough.
4. Shape the dough into a ball and chill for one hour.
5. Roll the dough to a thickness of a 1/2 centimetre.
6. Preheat the oven to medium heat. Cut the dough with the cookie cutters. Place the shapes on a greased sheet and sprinkle salt on top.
7. Bake for 10 minutes.
